Harvested cherries are first washed, with the outer skin removed, leaving part of the fruit pulp attached to the seeds. These beans are spread out to dry in the sun for approximately 7–12 days—shorter than the natural processing time—reducing the risk of over-fermentation.

This method retains some fruity sweetness from the remaining pulp while preserving more acidity than the natural process, but less than thoroughly washed beans.
